This creamy white lasagna swaps traditional noodles for layers of savory ground turkey, spinach, and a rich Alfredo-ricotta mixture. It is a keto-friendly, family-pleasing casserole that comes together in about an hour.

Ingredients

  • 1 pound ground turkey or chicken
  • 1 cup Alfredo sauce
  • 15 ounces ricotta cheese
  • 1 large egg
  • 0.5 teaspoon salt
  • 1 teaspoon dried minced garlic
  • 1 teaspoon dried minced onion
  • 6 ounces frozen spinach, thawed and drained well
  • 1 cup shredded mozzarella cheese

Instructions

Prep Time: 20 minutes

  1. Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the ground turkey until no pink remains, breaking it into crumbles. Drain any excess fat.
  3. In a medium bowl, combine the ricotta cheese, egg, salt, dried garlic, and dried onion. Stir until smooth.
  4. Squeeze all excess liquid from the thawed spinach. Add the spinach to the ricotta mixture and fold until combined.
  5. To assemble, spread half of the cooked turkey in an even layer in the prepared baking dish.
  6. Top the turkey with the entire ricotta-spinach mixture, spreading it evenly.
  7. Spread the remaining cooked turkey over the ricotta layer.
  8. Pour the Alfredo sauce evenly over the top layer of turkey.
  9. Sprinkle the shredded mozzarella cheese evenly over the sauce.
  10. Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
  11. Let the lasagna cool for 10-15 minutes before slicing and serving. This helps the layers set.

Recipe Notes

  • Meat Variations: Ground beef, Italian sausage, or a plant-based ground alternative can be used instead of turkey.
  • Sauce Choice: For a lower-carb option, use a homemade Alfredo sauce or a store-bought brand with minimal added sugars.
  • Spinach Prep: Ensure the spinach is thoroughly drained to prevent a watery lasagna.
  • Make-Ahead: Assemble the lasagna up to the cheese layer, cover tightly. Refrigerate for up to 24 hours before baking. You may need to add 5-10 minutes to the bake time.
  • Storage: Leftover s keep in the refrigerator for up to 4 days. Reheat individual portions in the microwave.
