These delicious low-carb keto beef enchiladas feature a savory ground beef filling wrapped in soft tortillas, topped with sugar-free enchilada sauce & melted cheese, baked until perfect. They’re an easy, flavorful weeknight meal that fits your macros.

Ingredients

  • 1 lb (450g) ground beef (80/20 or lean)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • ยฝ tsp paprika
  • Salt & pepper to taste
  • 4 low-carb tortillas (e.g., almond flour or coconut flour based)
  • 1 cup enchilada sauce (no sugar added)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a large skillet over medium heat, cook the onion & garlic until soft (about 3โ€“4 min). Add the ground beef & cook until browned, cooked through, breaking it up into small pieces (about 7โ€“8 min). Drain any excess fat if desired.
  3. Stir in the chili powder, cumin, paprika, salt, & pepper. Cook for 1 minute until fragrant. Remove from heat.
  4. Spoon the beef mixture evenly among the 4 tortillas, roll them up tightly. Place seam-side down in a9x13-inch baking dish.
  5. Pour the enchilada sauce evenly over the top, covering all tortillas. Sprinkle the shredded cheese evenly over the sauce.
  6. Bake in the preheated oven for 15โ€“20 minutes, until the sauce is bubbly & the cheese is melted & lightly golden.
  7. Remove from oven & let cool for 2โ€“3 minutes. Garnish with fresh chopped cilantro & serve hot.

Notes & Tips

  • Low-Carb Tortillas: Use almond flour, coconut flour, or mission low-carb tortillas. Check labels to ensure they fit your carb limit.
  • Enchilada Sauce: Choose a brand without added sugar or make your own with tomato sauce, chili powder, cumin, & garlic powder.
  • Spice Level:Adjust the chili powder & add diced jalapeรฑos if you prefer spicier enchiladas.
